Acidity: This natural tartness in grapes and other fruits contributes to vibrant flavours.*

Acreage: British Columbia currently has an estimated 9,100 acres under vine, up from just 1,000 acres planted in 1989.

Geography: Lake Okanagan, at 144 kilometres long and 3.5 kilometres average width, is the source of much-needed water for irrigation for vines in the Okanagan Valley.

Viticulture: Grapes for Icewine are harvested at -8° Celsius or lower, and often by moonlight.

Fermentation: The natural process in which yeast converts sugar to alcohol.*

  SpierHead Winery
  The winery is located on Spiers Road on the benchlands of southeast Kelowna. The winery, which opened in July, 2010, is accessed via a driveway that winds through a small apple orchard. The winery building, which boasts a view of the Okanagan Valley, is nestled into a slope, allowing for a barrel room which is beneath ground. Our ambition is to produce premium wines, from grapes grown on our vineyard and from grapes which we are sourcing on Black Sage Road, south of Oliver.
