The Guild | October 5 | Calgary, AB
Calgary's highly anticipated restaurant The Guild has opened its doors to a whole new level of cuisine for the city. This is the first western venture for Toronto's illustrious hospitality company, Oliver & Bonacini, and expectations have been surpassed. Housed in the historic old Hudson's Bay building downtown, The Guild is a destination for all-day dining and drinks that embodies the finest traditions of butchery, cookery and barkeeping. For this exceptional long table dinner, O&B's celebrated Corporate Executive Chef, Anthony Walsh, will partner with The Guild's Executive Chef, Canadian Culinary Champion Ryan O'Flynn. With assistance from Calgary Chefs Micheal Noble of The Nash and NOtaBLE, The Nash's Matthew Batey, Neil McCue of Whitehall and Charcut's Connie DeSousa and John Jackson, they will prepare an unforgettable homage to the best of Canadiana, with local Alberta Beef, game and fowl cooked over wood and coal, all paired with exceptional BC VQA wines.
Savio Volpe | October 12 | Vancouver, BC
Two Chefs with a passion for West Coast ingredients and an obsession with Italy's sumptuously simple flavours gather in one of Vancouver's most exciting new restaurants. Savio Volpe - the name means 'wise fox' - is designed to be a classic osteria, where the food is gathered from local fields and waters and everything from the pasta to the butchery is done by hand or as the Italians say, fatto a mano. Joining Savio Volpe's Chef Mark Perrier is his brother-in-spirit Joshua McFadden of Portland's Ava Gene's, where the Pacific Northwest and Italy coexist in delicious harmony. Dinner will be paired with the vibrant BC VQA wines of British Columbia for an evening con gusto e convivialita!
Deane House | October 18 | Calgary, AB
For Sal Howell, Deane House was a labour of love long before it opened its doors. The proprietor of Calgary's iconic River Cafe began talking to the Fort Calgary Historic Preservation Society about taking over the space a decade ago; now, at last, she has opened one of the city's most highly anticipated restaurants in one of its most historic buildings. Staying true to her philosophy of sustainable, regional, garden-fresh food is Head Chef Jamie Harling, formerly of Rouge Restaurant. At this special dinner, they will be joined by Matthias Fong of River Cafe and Jesse McCleery, Chef/Co-Owner of Galiano Island's award-winning, raincoast-inspired Pilgrimme, for a celebration or prairie and coast, mountain and garden. This collaborative dinner will be paired with exceptional BC VQA wines.
Ancora | November 16 | Vancouver, BC
Ricardo Valverde and Jesus Delgado are not just great Chefs. They are also great friends. They grew up together in Peru, home to one of the world’s most exciting culinary cultures, but ended up a continent apart, with Delgado in Chicago and Valverde in Vancouver. Now the two will come together at the seafood-centric Ancora for a collaboration unlike anything Vancouver has ever tasted. They will bring the deliciously diverse flavours of Peru from south to north Pacific tangy ceviches, silky potato causas and zingy aji chilies, as well as, elegantly sliced sustainable seafood from the hands of sushi master Yoshihiro Tabo. All this will be deftly paired with British Columbia VQA wines by one of the city’s greatest sommeliers, Andrea Vescovi. Chef Valverde, from Ancora, and Delgado, from Chicago’s Tanta, hail from kitchens led by some of the America’s most renowned Chefs such as South America’s super Chef Gaston Acurio at La Mar, so this is sure to be an impressive display of culinary talent.
Maenam | November 30 | Vancouver, BC
Thailand’s cuisine is among the world’s most complex: aromatic, favourful and influenced by many cultures, especially the vast numbers of Chinese who migrated here over the centuries and introduced dishes such as pad thai. This dinner will be a fragrant feast of flavours and textures that brings together two masterful Chefs of Chinese heritage and modern sensibility in the Thai milieu of Maenam, Vancouver magazine’s Restaurant of the Year. Angus An, Maenam’s Chef-Owner, hosts Mei Lin, the talented American rising star and 2015 Top Chefwinner for what is sure to be an evening of exceptional Thai fare, featuring the four most dominant styles of Chinese cooking in Thailand, perfectly paired with BC VQA wines.
Ten Foot Henry | December 4 | Calgary, AB
Chef-Owner Stephen Smee calls the food at his new restaurant "New North American cuisine, built for sharing'. That's just what will be on the menu at this lively, family-style brunch: a feast of intense, robust flavours in a modern, contemporary setting, paired with some of British Columbia's most intriguing BC VQA Wines. Ten Foot Henry - named for a plywood cartoon character that was for years an icon of Calgary's nightclub scene - is the city's hippest vegetable-forward restaurant, the brainchild of Chef Smee and his wife Aja Lapointe.
